Frittatas for All

Just wrote my brother out my recipe for the yummiest frittata around and thought I should share it here too. 

Ingredients

A dozen eggs

1 onion (dice)

a little bit of milk

1 potato (thinly sliced)

1 tomato (thinly sliced)

1 avocado ( long, thin slices)

1 big chunk of feta cheese (crumble)

Frittata Recipe

-Put the stove on to medium temperature.

-Put a little vegetable oil in the cast iron pan. 

-Start in with your onions and potatoes.

-While these are becoming delicious stir in a separate bowl 8-12 eggs and a splash of milk as well as a little salt and pepper.

-Also, at this point turn on the oven to about 400

-Once the onions turn brown and you can eat a potato without being sad put in your eggy mixture. 

-Stir the whole thing around.

-In the next fleet you are putting in tomatoes, avocados, and feta cheese. Make sure you have big crumbles of the feta cheese.

-At this point you can no longer mix very violently. If you try and mix or stir it too much, the avocado and tomato juices will start to meld into the egg part and the colors and tastes ends up less dramatic. Now turn the heat up to its highest capacity and wait until it seems fairly melded together. It should not be bubbling, but instead seem barely liquid-y.

-Then take some oven mitts and put the frittata in the oven and turn off the stove. 

-Keep it in for about 10 minutes and then start to check if the top of the frittata is getting browner. 

-When it is fairly brown, put a fork in the middle and make sure it is has a hardish consistency all the way through.

-Then take it out and let it cool and eat it.
